PREMIUM AGED BEEF

We invite you to enjoy our Premium Aged Beef products. Our rigorous quality control program, paired with traditional aging techniques allows us to deliver our Premium Aged Beef products with the highest level of customer satisfaction. Our goal is to bring you only the highest quality products utilizing environmentally sound agricultural practices and ethical treatment of our cattle.

The first step we take to ensure high quality products is to start with high quality cattle. We breed and raise all of our own cattle. Our cattle are specifically selected for their ability to produce well marbled flavorful beef. We only feed our cattle top rate grain, hay and forage products. We do not feed silage or filler materials. All of this greatly affects the final grade and flavor of our beef. All of our beef grades out as “Prime” which is the highest grade. Prime grade beef is typically only found at fine butcher shops. By way of comparison, your typical grocery store beef is graded as “Choice”. We do not sell choice or lower grades.

The next step in producing the highest quality beef is the dry-aging process. This process has been known for years to be the key to a tender and flavorful beef product. Our beef is dry aged by a local family owned/operated state inspected facility. Our butcher takes the time and care to properly process and dry age our beef product to attain the full extent of its flavor. Dry aging is rarely used by larger packing plants.

The final steps include vacuum packing and quick freezing the meat. Normal freezing causes large ice crystals to form, which ruptures meat fibers. This leads to loss of juice when the meat is thawed and produces a dryer finished product. The quick frozen process results in a tender juicy finished product. In addition, because of this process our beef can be kept for up to 12 months from the time of your purchase.

You should always thaw your meat to room temperature prior to cooking it. This will preserve the flavor and tenderness.
